As the lights of Diwali begin to shimmer across the country, it’s also time to indulge in delectable desserts and indulgent sweets that not only nourish the spirit but also treat the palate.

While boxes of traditional mithai, laden with ghee and sugar, continue to be exchanged, there’s a shift toward sweets that balance indulgence with mindful eating. This Anjeer Roll is a delight that captures the essence of Diwali while bringing a healthier, fruit-forward twist to the festive platter.

Made primarily from figs (anjeer), this sweet is naturally rich in fibre, iron, and antioxidants, making it a wholesome alternative to heavy, sugar-laden treats. The figs, once softened and cooked down with ghee and a touch of cashew nut powder, form a luscious base.

Inside, a fragrant filling of mawa, cardamom, and mixed nuts with a dash of green food colour adds a creamy richness.

It is rolled up and finished with a coat of roasted poppy seeds. These bite-sized sweets not only look beautiful on a festive thali but also offer layers of texture—from the chewiness of figs to the soft, nutty interior.

Note:
  • Double the ingredients when cooking for more people to ensure everyone gets a fluffy stack.
  • Swap out eggs for mashed bananas, yogurt, or flaxseed mix if you're vegetarian or allergic to eggs.
  • Use buttermilk instead of regular milk for extra soft and airy pancakes.
  • Let the batter rest for 5-10 minutes before cooking to get fluffier pancakes.
  • Cook on medium-low heat to avoid burning while ensuring even cooking.
  • Add vanilla extract or cinnamon for an extra touch of flavor.
  • Top with fresh fruits, nuts, or honey for a delicious and healthy twist.
