If there is one thing that festivities allow, it is eating and enjoying sweets and desserts, without any guilt. Now think about a decadent bowl of kheer prepared using dhudi (bottle gourd or lauki). While it might seem like an unusual pairing, but this Bhatkali recipe of dhudi godaan (or kheer) will change your opinion.

The Bhatkal cuisine belongs to the Navayath Muslim community of Bhatkal in Karnataka. As a result of their proximitiy to the sea, coconut makes for an important ingredient of the cuisine. This godaan or kheer pairs dhudi with coconut milk, condensed milk, coconut milk powder, and dry fruits. As guests drop in this festive season, this easy-to-make recipe will elevate your celebrations and leave family and friends impressed.

Ingredients
  • Grated dhudi - 1 kg
  • Basmati rice (soaked overnight) - 1 cup
  • Fresh coconut milk - 3 piece
  • Coconut milk powder - 0.5 cup
  • Condensed milk - 1 piece
  • Sugar (to taste) - 0 g
  • Almonds and cashew nuts (for garnish) - 0 g
Instructions
Step-1
Pressure cook dhudi with salt and water (water should be two inches above the dhudi).
Step-2
Grind the rice with thin coconut milk to a fine paste. Add little water while grinding
Step-3
Add this to the cooled dhudi.
Step-4
When it comes to a boil add the thick coconut milk, pinch of cardamom powder, and sugar. Toss in the nuts.
Step-5
Bring this to a nice boil and continue stirring. Ensure that it has a flowy consistency. If it is too thin then add 2-3 tpsp of cornflour mixed in water.

  • Double the ingredients when cooking for more people to ensure everyone gets a fluffy stack.
