If your Holi celebrations feature colour fights, loud Hindi playlists, and lots of dancing, then Caribbean Fire, a whisky-based cocktail, belongs right in your hand.

Made with The Glenlivet Caribbean Reserve, this cocktail leans into sunshine-soaked, tropical energy but with a fiery twist that feels right during the festival of colours. Think of it as a playful, island-inspired spin on a Bloody Mary, reimagined perfectly for the approaching summer. Instead of tomato and celery salt, you get juicy pineapple, tangy lime, a drizzle of agave for that herby kick, and a punch of small-batch hot sauce that reigns in the heat in the most unexpected way.

The whisky, finished in Caribbean rum casks, adds subtle notes of tropical fruit and toffee that pair well with pineapple juice and pink grapefruit soda. The result? A drink that’s smoky, spicy, citrusy and lightly sweet all at once. Served over ice and garnished with pineapple leaves and a daring slice of red chilli, Caribbean Fire doesn’t just taste festive—it looks the part too!

Note:
  • Double the ingredients when cooking for more people to ensure everyone gets a fluffy stack.
  • Swap out eggs for mashed bananas, yogurt, or flaxseed mix if you're vegetarian or allergic to eggs.
  • Use buttermilk instead of regular milk for extra soft and airy pancakes.
  • Let the batter rest for 5-10 minutes before cooking to get fluffier pancakes.
  • Cook on medium-low heat to avoid burning while ensuring even cooking.
  • Add vanilla extract or cinnamon for an extra touch of flavor.
  • Top with fresh fruits, nuts, or honey for a delicious and healthy twist.
