My childhood memories of apple pie are still vivid. Came November and December, when I was faced with chilly school mornings, my mother used apple pies, among other desserts, to encourage me to attend school. My fondness for the dessert remains unchanged, and I doubt it will ever fade. Truly, what is there not to love about apple pie?
The crust bakes into crisp, flaky layers that cradle a filling of apples, gently simmering in the oven with brown sugar, nutmeg, and lemon — creating that irresistible caramel-warm aroma that fills the entire kitchen (and the house). Every bite delivers a perfect balance of softness and spice, with neither overpowering the other.
The method is straightforward enough, but requires the skill of patience. Resting the dough keeps the crust light and flaky, and allows the apples to release their juices. This renders depth and a glossy finish to the filling. A full top crust or lattice adds rustic charm, and once baked, the pie requires just a little more patience — the cooling time allows the filling to set for picture-perfect and mouth-watering slices.

  • All-purpose flour - 2.5 cup
  • Cold and cubed unsalted butter - 1 cup
  • Granulated sugar - 1 tbsp
  • Salt - 1 tsp
  • Ice-cold water - 8 tbsp
  • Apples - 1.2 kg
  • Granulated sugar - 0.5 cup
  • Brown sugar - 0.25 cup
  • Lemon juice - 1 tbsp
  • Cinnamon - 1.5 tsp
  • Nutmeg - 0.25 tsp
  • A pinch of salt - 0 tbsp
  • All-purpose flour (or cornstarch for a clearer filling) - 3 tbsp
  • Unsalted butter (cut into tiny cubes) - 2 tbsp
Instructions
Step-1
Combine flour, sugar, and salt in a large bowl.
Step-2
Add cold cubed butter and use a pastry cutter or fingertips to break it down into pea-sized crumbs.
Step-3
Add ice-cold water, 1 tbsp at a time, and mix just until the dough comes together.
Step-4
Divide the dough into two discs, wrap separately in cling film.
Step-5
Refrigerate for at least 1 hour (this rest prevents shrinking).
Step-6
Peel, core, and thinly slice the apples.
Step-7
Combine apples with sugar (white and brown), lemon juice, cinnamon, nutmeg, salt, and flour/cornstarch.
Step-8
Mix gently and let rest for 20 minutes — the apples release juices and the flavours deepen.

Preheat the oven to 200°C / 400°F.
Step-10
Roll one dough disc into a 12-inch circle and line a 9-inch pie dish.

Pour in the apple filling with all the juices, then nestle the apples evenly.

Dot with small cubes of butter.

Roll the second dough disc and place it on top — you can either lay it whole and cut slits for steam, or create a lattice pattern.
