Monsoons are around the corner, and while we wait to relish snacks with a hot cup of tea and coffee, this one needs no introduction. Spring rolls are a timeless favourite–perfect as a party snack, a lunchbox treat or a crispy companion to your masala chai

The tofu carrot spring rolls are a flavourful twist on the regular spring rolls. While the regular ones are stuffed with excessive cabbage, her version has a mix of vegetables and the goodness of tofu and carrots, making this a healthy and delectable snack for the monsoon. 

Uma shares how this is a simple recipe with a long shelf life. By preparing the filling of the spring rolls in advance, you can store them in the refrigerator for a week.

Ingredients
  • Sesame oil - 2 tsp
  • Garlic cloves(finely chopped) - 3 piece
  • Ginger(grated) - 0.5 piece
  • Green chillies - 2 piece
  • Onion - 1 piece
  • Carrot - 1 piece
  • Tofu - 150 g
  • Handful of coriander leaves/ spring onions for garnish - 0 g
  • 20 spring roll sheets - 0 g
  • flour (mixed with water to get a paste like consistency) - 1 tsp
  • Water - 2.5 tsp
  • Oil - 0 g
  • Salt to taste - 0 g
Instructions
Step-1
To make the filling, heat a wide pan with oil.
Step-2
Add the green chillies, ginger, garlic and fry them for a few seconds.
Step-3
Now add the onions and mix well. Let the onions turn light pink.
Step-4
Add the grated carrot, crumbled tofu, salt, and mix well.
Step-5
Cook for a few minutes till all the extra moisture is absorbed.
Step-6
Garnish and switch off the gas.
Step-7
Take the spring roll sheet( square shape) and spoon the filling into one corner. 
Step-8
Fold and roll the sheet and seal it using the flour-water mixture. 
Step-9
Repeat the process for the remaining filling.
Step-10
Heat oil and deep fry the spring rolls till they are uniformly golden on all sides.

Note:
  • Double the ingredients when cooking for more people to ensure everyone gets a fluffy stack.
  • Swap out eggs for mashed bananas, yogurt, or flaxseed mix if you're vegetarian or allergic to eggs.
  • Use buttermilk instead of regular milk for extra soft and airy pancakes.
  • Let the batter rest for 5-10 minutes before cooking to get fluffier pancakes.
  • Cook on medium-low heat to avoid burning while ensuring even cooking.
  • Add vanilla extract or cinnamon for an extra touch of flavor.
  • Top with fresh fruits, nuts, or honey for a delicious and healthy twist.
