Once considered humble staples, these ancient grains are now being reimagined by chefs across the country for their nutritional punch, earthy flavour, and sustainable charm. Jowar waffles with dehydrated milk tacos and gwarfali bhurji is an innovative take on these traditional ingredients. The humble jowar gets a crispy, golden makeover as a hearty waffle base.

Dehydrated milk sheets are shaped into delicate taco shells, bringing creamy richness and visual drama, and tucked inside? A bold, spiced gwarfali (cluster beans) bhurji that packs an umami punch with a whisper of nostalgia.

Ingredients
  • Milk - 900 ml
  • Oil - 100 ml
  • Jowar flour - 600 g
  • Salt - 10 g
  • Kasuri methi - 5 g
  • Chilli powder - 5 g
  • Turmeric powder - 5 g
  • Coriander powder - 10 g
  • Baking powder - 40 g
  • Garam masala - 40 g
  • Mustard seeds - 5 g
  • Hing (asafoetida) - 5 g
  • Onion - 5 g
  • Green chilli - 10 g
  • Fresh coriander - 10 g
  • Tomato - 25 g
  • Ginger - 10 g
  • Ghee - 25 g
  • Rice flour - 20 g
  • Curd - 20 g
Instructions
Step-1
Add milk, oil, jowar flour, rice flour, salt, curd, powder spices, finely chopped green chilli, ginger and coriander in a mixing bowl.
Step-2
Adjust batter consistency with the milk for thinness if needed.
Step-3
Finally, mix in baking soda right before making the waffles.
Step-4
Preheat the waffle maker and lightly grease it with butter. Pour the batter, spread it evenly, and cook until crispy and golden.
Step-5
For milk tacos, use full-fat milk to get a thick layer of milk. To shape them, use any mould and dehydrate them until crispy.
Step-6
Wash and clean the beans, and cut them into small pieces.
Step-7
For the bhurji, cook the beans in a pot, bring water to a boil. Add a pinch of salt and oil and cook until they are tender. Transfer into ice water to avoid overcooking and discolouration.
Step-8
In a pan, heat the oil over medium heat, add mustard seeds, cumin, and a pinch of asafoetida.
Step-9
Combine the beans and cook. Add chopped onion, garlic, green chilli, tomatoes, and powdered spices until well coated. Finish with chopped fresh coriander.
