Easy Summer Cooler Recipe: How To Make Kairi ka Paani At Home

Every household has a staple summer drink—mine has many. But one summer cooler that has truly stood the test of time and is loved by every member of my family is kairi ki chaach, also known as kairi ka paani. Every evening, before the family gathered around the dinner table, my grandmother would carefully prepare this drink for all of us. No one could ever make it quite like she did. Here, I share that very recipe from our kitchen.

Kairi ki Chaach
This summer cooler is prepared using raw mango and a few spices

This refreshing drink is tangy, zesty, and citrusy—a perfect summer cooler. It not only protects you from the harsh loo winds but also keeps you hydrated and energised through the scorching heat.

“Raw mangoes act as the cooling and hydrating agents in the drink, while roasted cumin seeds are excellent for gut health,” my grandmother would say. She always recommended serving it chilled, straight from the fridge. “You should have a glass at lunch and another at dinner,” she’d add with a smile.

Ingredients
  • Raw mangoes - 2 piece
  • Roasted cumin seeds or jeera - 1 tsp
  • Mint leaves - 0 g
  • Salt to taste - 0 g
  • Black salt to taste - 0 g
  • Lemons - 2 piece
Instructions
Step-1
Take two raw kairis and boil them on medium heat in a pressure cooker (until it whistles twice).
Step-2
Place the boiled kairis in cold water for about 5 minutes.
Step-3
Peel the kairis and extract the pulp.
Step-4
Add the pulp of the two kairis in a mixer along with a few mint leaves. Grind the pulp until you have a semi-liquid consistency.
Step-5
Strain the paste through a sieve.
Step-6
Add approximately 4 glasses of water while straining the paste through a sieve.
Step-7
Add 1 tsp roasted cumin seeds, black salt and salt to taste, and squeeze two lemons in the water.
Step-8
Refrigerate for an hour before you drink.

  • Double the ingredients when cooking for more people to ensure everyone gets a fluffy stack.
  • Swap out eggs for mashed bananas, yogurt, or flaxseed mix if you're vegetarian or allergic to eggs.
  • Use buttermilk instead of regular milk for extra soft and airy pancakes.
  • Let the batter rest for 5-10 minutes before cooking to get fluffier pancakes.
  • Cook on medium-low heat to avoid burning while ensuring even cooking.
  • Add vanilla extract or cinnamon for an extra touch of flavor.
  • Top with fresh fruits, nuts, or honey for a delicious and healthy twist.
