Ingredients
  • Blended mango puree - 300 g
  • Boiled urad daal(coarsely blended - 0.25 cup
  • Crumbled paneer - 50 g
  • All purpose flour - 1 cup
  • Pure ghee - 4 tbsp
  • Coconut grated - 50 g
  • Cashew nut - 10 g
  • Raisins - 10 g
  • Roasted sesame seeds - 2 tbsp
  • Cumin seeds - 0.25 tsp
  • Pomegranate seeds - 0.25 cup
  • Cinnamon powder - 1 tsp
  • Cardamom powder - 0.25 tsp
  • Salt - 0.25 tsp
  • Oil for frying - 0 g
Instructions
Step-1
Add all-purpose flour to a mixing plate. Rub the cumin seeds between your palms to release their aroma, then mix them into the flour.
Step-2
Add 1 tablespoon of ghee and knead the dough using mango purée—do not use any water. Cover and set it aside to rest.
Step-3
Heat a pan and add 1 tablespoon of ghee. Add the urad dal and sauté briefly. Add crumbled paneer, 1 teaspoon of salt, cumin powder, finely chopped green chilies, and 30 grams of mango purée.
Step-4
Cook the mixture until it thickens slightly, then stir in the grated coconut. Taste and adjust the sweetness if needed.
Step-5
Add cashew nuts and raisins. Turn off the heat and let the mixture cool completely.
Step-6
Once cooled, mix in cinnamon powder, cardamom powder, roasted sesame seeds, and pomegranate seeds. Your filling is now ready.
Step-7
Divide the dough into small balls, covering them with a damp cloth to prevent drying.
Step-8
Heat oil in a kadhai and add a little ghee to enhance the flavour.
Step-9
Roll out each dough ball into a small poori, place a spoonful of filling in the centre, and shape it into a kachori.
Step-10
Fry the kachoris on medium heat until they turn golden brown and crispy.
Step-11
