The drink features a dark rum base—ideally Jamaican or Demerara—that adds a deep molasses note. It also adds warmth and a sharp aftertaste. Brown sugar syrup adds gentle sweetness and rounds off the drink while vanilla enriches the mix without overpowering the flavours.
The recipe stands out for its spiced butter base. Unsalted butter is blended with brown sugar, cinnamon, nutmeg, allspice, and a pinch of salt. This mix gives the drink its signature richness and subtle spice. The butter is used sparingly to keep the drink light. It’s finished with a foam made from warm milk and the spiced butter mix.

- Brown sugar syrup (1:1) - 10 ml
- Vanilla syrup (optional but recommended) - 5 ml
- Hot water (to top)
- Unsalted butter (softened) - 100 g
- Brown sugar - 40 g
- Cinnamon powder - 0.5 tsp
- Nutmeg - 0.25 tsp
- Allspice (a pinch)
- Salt (to taste)
- Milk - 60 ml
- Spiced butter base - 15 ml
- Vanilla syrup - 10 ml
- Cinnamon tincture (1 dash)
- Soy lecithin (optional & to taste, if using immersion blender)
Instructions
Step-1
Prepare the spiced butter by adding cream butter, sugar, spices, and salt until smooth. Store chilled.
Step-2
Add rum and brown sugar syrup to a pre-heated glass
Step-3
Add 1 tsp spiced butter
Step-4
Top with hot water and gently stir
Step-5
For the Foam- Heat the milk until lightly simmering, then blend with the spiced butter base and vanilla until airy.
Step-6
Top & Garnish- Spoon foam on top, dust with nutmeg, and garnish with a cinnamon stick.
Note:
- Double the ingredients when cooking for more people to ensure everyone gets a fluffy stack.
