Lohri is a festival that demands something warm, indulgent, and sweet, especially given the colder temperatures that prevail across most parts of India during this time of year. These puran poli rolls are a playful twist on the classic puran poli, a traditional Indian sweet flatbread originating from Maharashtra. The recipe by Jaypee Greens Golf & Spa Resort is one that offers familiarity and comfort, but with a surprise.
It preserves the original’s slow-cooked chana dal, jaggery, ghee, and spices, but transforms it into a festive, winter dessert. Imagine puran poli on a winter dessert platter: crisp outside, soft and saffron-laced inside, drizzled with honey, and topped with almonds and pistachios. It’s a sensory delight in one dish!
Using spring roll sheets instead of traditional dough adds a light crunch to the rich filling. This version is familiar yet fresh, comforting yet distinct—perfect for a Lohri table. Serve warm with rabri to celebrate tradition, winter, and Lohri!

Ingredients
- Chana dal (washed and soaked for 2-3 hours) - 1 cup
- Turmeric powder (to taste)
- Salt (to taste)
- Water - 2 cup
- Grated jaggery - 1 cup
- Ghee - 1.5 tbsp
- Grated coconut - 0.25 cup
- Cardamom powder - 1.5 tsp
- Nutmeg powder (to taste)
- Saffron (soaked in 1 tsp warm water) - 12.01 piece
- Spring roll sheets - 10 piece
- Slivered almonds - 2 tbsp
- All-purpose flour (mixed with 2 tbsp water) - 1 tbsp
- Honey - 2 tbsp
- Crushed almonds and pistachios - 1 tbsp
Instructions
Step-1
In a pressure cooker, cook the soaked chana dal by adding water, salt, turmeric powder over a medium heat until the desired softness is obtained. Drain out the extra water from the boiled dal and transfer it to a heavy bottom pan on low-medium heat, add jaggery and keep stirring until the jaggery melts.
Step-2
Mash the dal with the back of a spoon until it turns into a smooth paste. Continue cooking until the mixture thickens and leaves the edges of the pan.
Step-3
Now, pour the ghee, grated coconut, cardamom powder, nutmeg powder, saffron, and mix well to combine. Transfer it on a flat surface and allow to cool completely.
Step-4
To assemble the puran poli rolls, take a spring roll sheet, place the puran filling in a cylindrical shape by the side, top this with almonds. spread a little bit of the flour slurry on the edges fold it from both the sides to hold its shape and roll tightly.
Step-5
Brush the rolls with ghee and bake at 350℉/175℃ for 10 minutes until golden brown and crispy. You can also deep fry them.
Step-6
Once baked, glaze them with honey, garnish with almonds and pistachios.
Step-7
Your Puran Poli Rolls are ready to be served. Enjoy them with a bowl of Rabri.
