Idyllic.

Idyllic.

As we gear up for this festive season, here’s a cocktail that will make your celebrations more special. It is a drink where tequila meets layers of fresh fruits and herbs. Built on a base of Jose Cuervo Reposado, Idyllic blends the warmth of aged agave with the complexity of red and dry vermouth. A splash of verjus adds gentle acidity and the drink is tied together by layers of strawberries, figs, starfruit, citrus, and sprigs of marjoram and tarragon.

The result is a drink that’s as striking to look at as it is to sip. It will not only leave your guests impressed but also expect them to ask for a second pour. Serve it over ice, and you’ve got a cocktail that feels effortlessly elegant, layered, and refreshing.

Note:
  • Double the ingredients when cooking for more people to ensure everyone gets a fluffy stack.
  • Swap out eggs for mashed bananas, yogurt, or flaxseed mix if you're vegetarian or allergic to eggs.
  • Use buttermilk instead of regular milk for extra soft and airy pancakes.
  • Let the batter rest for 5-10 minutes before cooking to get fluffier pancakes.
  • Cook on medium-low heat to avoid burning while ensuring even cooking.
  • Add vanilla extract or cinnamon for an extra touch of flavor.
  • Top with fresh fruits, nuts, or honey for a delicious and healthy twist.
