With fans whirring at full speed and air conditioners running nonstop, the sweltering summer heat can feel relentless. But nothing cuts through the haze quite like a chilled, flavour-packed drink. Chef and food blogger Nikita Varma, known for her inventive yet simple recipes, brings just the right refreshment to the table with her Bael Panna Fizz—a desi twist on the classic mojito.

This summer cooler stars the bael fruit (wood apple), prized not just for its naturally sweet and tangy flavour but also for its medicinal properties. Rich in antioxidants and fibre, bael is known to ease indigestion, balance gut acidity, and help manage cholesterol and blood sugar levels. In this drink, the pulp of ripe bael is blended with a splash of lime juice, a hint of black salt, mint leaves, and topped with sparkling water or soda, creating a fizzy, gut-friendly refresher that’s both hydrating and revitalising.

Whether you’re lounging indoors or hosting friends, Bael Panna Fizz is the perfect glass of goodness to cool down, one sip at a time.

Note:
  • Double the ingredients when cooking for more people to ensure everyone gets a fluffy stack.
  • Swap out eggs for mashed bananas, yogurt, or flaxseed mix if you're vegetarian or allergic to eggs.
  • Use buttermilk instead of regular milk for extra soft and airy pancakes.
  • Let the batter rest for 5-10 minutes before cooking to get fluffier pancakes.
  • Cook on medium-low heat to avoid burning while ensuring even cooking.
  • Add vanilla extract or cinnamon for an extra touch of flavor.
  • Top with fresh fruits, nuts, or honey for a delicious and healthy twist.
