The time to sit in your balcony with a drink in one hand and a book in another has finally arrived. To put it simply, monsoon is finally here. And while it is great to sip on some piping hot chai or coffee, a bold, spicy cocktail also fits the bill. Crafted by Nitin Gupta, Head Bartender at BeeYoung Brewgarden, Hearts on Fire is a cocktail that not only brings you the sweetness of passion fruit but the depth of tequila and the fiery kick of chilli.

At its base is tequila, that lends a clean agave character which pairs naturally with the sweet-tart notes of passion fruit purée. Fresh lime juice adds acidity, while limoncello lends a delicate citrus sweetness that complements the drink without overpowering it. The real twist, however, comes from fresh bird’s eye chilli. Muddled lightly with agave syrup, it infuses the cocktail with a subtle warmth that builds gradually, complementing rather than dominating the fruit-forward profile.

Served over ice in a chilli-lime, Tajín-rimmed rocks glass, Hearts on Fire is designed to engage every part of the palate. The spicy rim adds an extra layer of flavour with each sip, while the garnish of fresh chilli or lime hints at what’s to come. Although visually vibrant, the cocktail‘s appeal lies in its balance—sweet, sour, citrusy, and spicy in equal measure.

Ingredients
  • Blanco or Reposado Tequila - 60 ml
  • Passion Fruit Purée - 30 ml
  • Fresh Lime Juice - 23 ml
  • Limoncello - 15 ml
  • Agave Syrup (adjust to taste)
  • Fresh Bird's Eye Chili (adjust based on desired heat)
  • Ice
  • Optional: Chili-lime salt or Tajín for rimming the glass
  • Fresh bird's eye chili slice or a half-wheel of lime
Instructions
Step-1
Prepare a rocks glass by rubbing a lime wedge around the rim and coating it with chili-lime salt or Tajín. Fill the glass with fresh ice.
Step-2
In a cocktail shaker, gently muddle the bird's eye chili with the agave syrup to release the spice oils.
Step-3
Add the tequila, passion fruit purée, fresh lime juice, and limoncello to the shaker.
Step-4
Fill with ice and shake vigorously for 10–15 seconds until well chilled.
Step-5
Double strain into the prepared glass to remove the chili seeds and pulp.

  • Double the ingredients when cooking for more people to ensure everyone gets a fluffy stack.
  • Swap out eggs for mashed bananas, yogurt, or flaxseed mix if you're vegetarian or allergic to eggs.
  • Use buttermilk instead of regular milk for extra soft and airy pancakes.
  • Let the batter rest for 5-10 minutes before cooking to get fluffier pancakes.
  • Cook on medium-low heat to avoid burning while ensuring even cooking.
  • Add vanilla extract or cinnamon for an extra touch of flavor.
  • Top with fresh fruits, nuts, or honey for a delicious and healthy twist.
