Try this on an especially sweltering summer day.

If there’s ever a day to swap your usual drink order for a gin cocktail, it’s World Gin Day on June 13. Once known primarily as the spirit behind a classic G&T, gin has evolved into one of the most versatile bottles behind the bar, with styles ranging from juniper, London dry expressions to citrus-led Mediterranean gins and botanical-rich pours from Europe. It pairs well with every kind of moxer, including herbs, spices, fruits and florals, which is exactly what has made it a favourite among bartenders and cocktail lovers alike.

To celebrate the occasion, raise a glass with The Pink Floradora—a bright, refreshing cocktail that combines the strawberry notes of Beefeater Pink with zesty lime, spicy ginger, and a fizzy beer to finish. It’s fruity and citrusy with a gingery kick (the best part).

So, if you’re craving a cocktail that’s perfectly suited to a long summer afternoon and a toast to one of the world’s most beloved spirits, start here.

Note:
  • Double the ingredients when cooking for more people to ensure everyone gets a fluffy stack.
  • Swap out eggs for mashed bananas, yogurt, or flaxseed mix if you're vegetarian or allergic to eggs.
  • Use buttermilk instead of regular milk for extra soft and airy pancakes.
  • Let the batter rest for 5-10 minutes before cooking to get fluffier pancakes.
  • Cook on medium-low heat to avoid burning while ensuring even cooking.
  • Add vanilla extract or cinnamon for an extra touch of flavor.
  • Top with fresh fruits, nuts, or honey for a delicious and healthy twist.
