Chocolate lava cake is a timeless dessert loved for its rich chocolate flavour and signature molten centre. Crisp around the edges yet irresistibly gooey inside, it offers the perfect balance of texture and indulgence. This version by Executive Chef Avijit Deb Sharma of RAAYA by Atmosphere is elegant enough for a dinner party while remaining simple to recreate at home.

The recipe calls for dark chocolate, unsalted butter, sugar, whole eggs, egg yolks, all-purpose flour, vanilla extract, and a pinch of salt. The ramekins are greased with butter and dusted with cocoa powder to ensure the cakes release easily after baking.   • Dark chocolate - 120 g
  • Unsalted butter - 100 g
  • Sugar - 80 g
  • Eggs whole - 2 piece
  • Eggs yolk - 2 piece
  • All-purpose flour - 40 g
  • Vanilla extract - 0.5 tsp
  • Pinch of salt
  • Butter and cocoa powder for greasing moulds
Instructions
Step-1
Preheat the oven to 200°C and prepare ramekins by greasing with butter and lightly dusting with cocoa powder.
Step-2
Melt the dark chocolate and butter together using a double boiler until smooth and glossy.
Step-3
In a separate bowl, whisk whole eggs, egg yolks, and sugar until pale and slightly aerated.
Step-4
Gradually mix the melted chocolate mixture into the egg mixture, ensuring even incorporation.
Step-5
Sift in the flour and salt, then gently fold until a smooth batter is achieved. Avoid overmixing.
Step-6
Portion the batter evenly into the prepared ramekins, filling each to approximately three-quarters.

Bake for 8–10 minutes, until the edges are set while the centre remains soft and molten.

  • Double the ingredients when cooking for more people to ensure everyone gets a fluffy stack.
