Mumbai's iconic bhel puri, reimagined as a refreshing gin highball

Mumbai's iconic bhel puri, reimagined as a refreshing gin highball

Bringing the flavours of Mumbai’s iconic Chowpatty into a glass, the Chowpatty Bhel Puri Highball is an inventive cocktail that reimagines one of India’s favourite street snacks through the lens of modern mixology. Created by Anurag Dhingra, Head of Liquid Artistry at Farzi Cafe, this highball captures the tangy, spicy and citrusy notes associated with bhel puri while allowing the botanical character of the gin to shine.
The addition of sparkling lemon soda lends a crisp finish, while subtle seasoning of chaat masala enhances the cocktail’s layered flavour profile without overpowering it.
The cocktail is built on Tanqueray London Dry Gin, which lends a juniper-forward botanical profile. It is complemented by clarified bhel puri chutney cordial, which delivers the sweet, tangy and herbaceous flavours associated with Mumbai’s beloved snack. A pinch of chaat masala adds complexity, while Limca-style lemon soda brings lively citrus notes and effervescence, making the cocktail exceptionally refreshing. For the finishing touch, it is garnished with a micro coriander leaf, while an optional sev dust rim adds visual appeal and a playful nod to its street-food parent.
The drink balances nostalgia with sophistication, making it ideal for summer celebrations and ideal for anyone looking to explore gin beyond classic cocktails

Note:
  • Double the ingredients when cooking for more people to ensure everyone gets a fluffy stack.
  • Swap out eggs for mashed bananas, yogurt, or flaxseed mix if you're vegetarian or allergic to eggs.
  • Use buttermilk instead of regular milk for extra soft and airy pancakes.
  • Let the batter rest for 5-10 minutes before cooking to get fluffier pancakes.
  • Cook on medium-low heat to avoid burning while ensuring even cooking.
  • Add vanilla extract or cinnamon for an extra touch of flavor.
  • Top with fresh fruits, nuts, or honey for a delicious and healthy twist.
