A slow food advocate, Dosanj shares her love for organic ingredients, outdoor settings and the stories that bind her to food. She believes the real heroes of the culinary world are farmers and home cooks weaving love into every ingredient and every recipe. Farm-table dinners make her feel closer to her Indian roots. “I wanted to take it back to how India used to be before conventional agriculture ran rampant. I wanted to take it back to how villages still operate with cooking locally,” adds Aman.

Through her explorations worldwide, she finds peace in creating delectable recipes with her mom. Pop-up and farm-table dinners make her feel fulfilled, feeding the community and curating stories about it. Amidst the flavourful menu she has built over the years, Dosanj shares one of her favourite heirloom recipes.

This recipe riffs on a classic heirloom tomato salad made by Dosanj’s mother. For the Indian punch, she uses her mum’s green chutney instead of basil and some fresh paneer. As soon as you salt the ripe tomatoes, they’ll release their juices, so don’t forget to slurp on what’s left at the bottom of the bowl!

Ingredients
  • Mixed variety organic heirloom tomatoes - 5 piece
  • Chaat masala - 1 tsp
  • A pinch of coarsely ground black pepper - 0 g
  • A bunch of coriander - 0 g
  • Mint sprigs(2-3) - 0 g
  • Onion(chopped) - 0.5 piece
  • Thai green chilly - 1 piece
  • Lemon - 0.5 piece
  • Ice cubes - 2 piece
  • Salt to taste - 0 g
  • Freshly made crumbly paneer to garnish - 0 g
  • Extra-virgin olive oil - 0 g
Instructions
Step-1
Add the quartered tomatoes to a medium mixing bowl.
Step-2
Sprinkle in the chaat masala, salt and black pepper, giving it a good mix.
Step-3
Now add the green chutney made with coriander, mint, onions and Thai green chilly and mix well.
Step-4
Taste and adjust the seasoning accordingly.
Step-5
Top with crumbled paneer and garnish with micro-greens.

Drizzle in a generous glug of olive oil.
