From a black forest pastry with a berry twist to seasonal classics like mango and coconut pastry and a weekly Apfelstrudel preparation, The Imperial New Delhi launches Haute Patisserie
The Imperial New Delhi adds another feather to its cap with the launch of Haute Patisserie in Delhi. Inspired by Europe’s celebrated pastry lineages, the patisserie is governed by a dialogue between Parisian stagecraft of the Opéra cake and the ceremonial finesse of Viennese pastry culture and desserts.
Each piece is designed with meticulous attention to detail. From the selection of ingredients, texture, balance, visual harmony and final presentation, the menu at Haute Patisserie is guided by freshness and seasonality, ensuring that every bite carries a sense of place and time.
When Viennese desserts are in question, the first thing that would occur to anyone is a sachertorte— a chocolate sponge cake covered with chocolate glaze and filled with apricot jam. Haute Patisserie’s interpretation of the dessert features moist sponge, orange jam filling, and a glossy bitter chocolate glaze, which transports you to a bakery in Vienna that does one of the best sachertorte in the city.
Making a tough choice, my favourite from the selection is their Black Forest pastry. Layered with dark cherries and crème Chantilly, and topped with delicate chocolate flakes, the berries cut the sweetness in the chocolate to add a tang that complements every bite. Each spoonful is creamy and rich, owing to the crème Chantilly. I could go on about how good it was, but you must try for yourself.
At the heart of the menu lies the Imperial Fruit Cake. It features a curated procession of flavours with a refined balance of texture and sweetness.
Adding the king of summers (and fruits) to the selection is their Mango & Coconut pastry. The chunks of pulpy, sweet mango paired with the mild notes of coconut is refreshing and well suited to the temperatures outside the Parisian windows of Haute Patisserie. No matter how much you want to stop at a few bites, the pastry will call you back until all you can see is a few crumbs.

If you are one for eggless options, go for their Classic Vanilla, Cinnamon Caramel, Imperial Pineapple, and Banoffee with banana jam. For those who want to keep their diets intact without the fear of missing out on delicious treats, their Vegan Chocolate cake and Gluten-Free Orange and Chocolate, are safe options.
Signature creations extend beyond the cakes and pastries into a Grandmother-style repertoire of tarts.
Highlights include The Pecan Nut Tart that pairs sable shortcrust with caramelised toasted pecans, Frangipane Fruit Tart that presents a sweet pastry base layered with seasonal fruits and a crisp frangipane, and the Apple Caramel Tart that combines sable, almond cream, and caramelised apple.
What you don’t want to miss are Sundays at Haute Patisserie. Among the list of desserts that leave behind a rich history, Apfelstrudel or Apple Strudel is among the top five. The layered, traditional strudel is believed to have arrived in Vienna between the 16th and 17th centuries with the Ottoman Empire. The earliest recipe of strudel is found in a handwritten text from 1696 which is still preserved in the Vienna City Library. The strudel features a thin, flaky crust wrapped around a warm, spiced filling that includes ingredients like raisins, toasted breadcrumbs, sugar, and cinnamon. Every Sunday at Haute Patiserrie, chefs prepare an unmissable Apfelstrudel that is a nod to Viennese culinary traditions paired with a lot of flavour.
