Hyatt Regency Delhi Launches Spanish Fest And Summer Menus

From Spanish tapas and paella at Syrah to a refreshed Italian summer menu at La Piazza and fruit-forward cocktails at Sidewalk and Polo Lounge, Hyatt Regency Delhi is rolling out a season-focused culinary programme for summer 2026.

As Delhi’s hospitality industry enters the peak summer period, luxury hotels across the capital are increasingly leaning into limited-period food festivals and seasonal dining concepts to attract local diners. Joining that trend, Hyatt Regency Delhi has announced a new line-up of culinary experiences spanning Spanish cuisine, Italian summer specials and seasonal beverages.

The programming begins with Spanish Fiesta at Syrah, running from May 14 to May 24, 2026. Led by Chef Adrià Villarroya Navarro from Hyatt Regency Oryx Doha, the festival draws on the food traditions of cities such as Barcelona, Valencia, and Seville.

The menu centres around Spain’s culture of shared dining, featuring tapas, paella and grilled dishes served in a relaxed format. Highlights include Gambas al Ajillo, Patatas Bravas, Croquetas de Setas y Trufa, Paella de Pollo, flaky cod, and seafood paella, alongside desserts such as Basque cheesecake and churros with chocolate. Spanish-inspired mocktails have also been introduced as part of the experience. n

Short-format regional food festivals have become increasingly common within India’s luxury hotel sector, particularly as properties look to create destination dining experiences beyond their regular restaurant offerings.

La Piazza Introduces A Lighter Summer Menu

Following the Spanish festival, La Piazza will launch its new summer menu from May 27 onwards. The restaurant, long associated with Italian fine dining in the capital, is shifting focus towards lighter preparations and seasonal ingredients suited to warmer weather.

Among the additions is an Aperitivo Board inspired by Italy’s pre-dinner sharing tradition, featuring artisanal cheeses, cold cuts and accompaniments designed for leisurely dining. The menu will also include Indian lobster prepared using Italian techniques, Chicken à la Diavola and freshly handcrafted pastas.

Summer Cocktails Focus On Tropical And Citrus Flavours

Alongside its food programming, the hotel’s Sidewalk and Polo Lounge venues are introducing a seasonal beverage menu built around tropical fruits, herbs and floral ingredients.

The drinks selection includes cocktails such as Sunset Nectar, Tropical Verde, Arctic Bloom, and Pineapple Picante, while the mocktail menu features options like Lychee Bloom, Guava Chilli Aura, and Ruby Coco Elixir. Ingredients across the menu include mango, passion fruit, peach, cucumber, elderflower and berries.

With seasonal menus and short-duration culinary events becoming an increasingly important part of urban hospitality strategy, hotels are continuing to position their restaurants and lounges as standalone lifestyle destinations during the summer months.
