“I still remember the first time I tasted authentic Vietnamese pho,” he recalls. “It was in Hoi An, early in the morning, with steam rising from a street-side pot. That first sip of broth changed everything—it wasn’t just flavour, it was feeling.”
That experience cultivated the chef’s approach and outlook to food—one that values balance, warmth, and honesty in every dish. His travels across Vietnam’s markets and kitchens have informed this menu, which blends traditional recipes with inventive ingredients and presentations. “With my new menu, I’ve preserved tradition while embracing modern culture. You’ll find dishes that echo the streets of Saigon, the flavours of the Mekong, and the spirit of Hoi An,” says Nakra.

What’s New On The Menu?
The new line-up offers both refreshed favourites as well as new items. Expect everything from stir-fried mushrooms in chilli hoisin sauce, duck pancake rolls, and lamb black pepper, to chargrilled chicken satay with lime leaf, and mushroom milk truffle spring rolls. There’s also prawn and bamboo shoot in rice paper, cream cheese dumplings with chilli oil, and a striking tofu black fungus carpaccio—a dish that combines silken tofu, black fungus, and fresh herbs in a sweet and sour soy dressing.
Each dish reflects Nakra’s vision of Vietnamese cuisine with “fresh energy, playful textures, and a contemporary voice.” For those seeking lighter options, the cucumber, peanut, and sesame salad, with its mix of scallions, sesame dressing, and burnt chilli crisp, stands out for its simplicity and depth.
