The Hyatt Regency, Delhi, has announced a Kashmiri Food Festival at Café, its all-day dining restaurant, bringing the culinary and cultural traditions of Kashmir to the capital for a limited period of time. Scheduled to run from January 30 to February 8, 2026, the festival is centred around a curated showcase of Kashmiri cuisine, highlighting the region’s time-honoured heritage, flavours, and cooking techniques, in the setting of a luxury hotel.

Positioned as a premium dining experience, the festival offers guests a multi-course buffet that reflects the diversity and depth of Kashmiri food. The initiative aims to offer an authentic regional experience while maintaining the composure of fine dining.

A Celebration of Kashmiri Culinary Traditions

Rooted in the traditional, slow-cooking methods of the region, the festival menu draws on aromatics and flavours such as saffron, fennel, dried ginger, and Kashmiri chillies, which, of course, are central to the region’s cuisine. Diners can expect a wide range of slow-cooked gravies, carefully spiced meats, and ceremonial preparations that collectively represent the culinary identity of the Kashmir valley.

The menu has been developed in collaboration with Chef Rehman, who specialises in Kashmiri cuisine and is recognised for his dedication to preserving traditional techniques. His approach focuses on preserving the authenticity of Kashmiri culture while adapting the cuisine for a rather refined dining environment. 

Here’s What To Expect From The Menu

Talking about the Kashmiri curation, Chef Rehman said, “Every dish is rooted in memory, technique, and respect for tradition. This menu is an invitation to experience the fragrance and warmth of Kashmiri hospitality.”

Chef Rehman, the man behind this 10-day culinary experience that offers the authentic taste of Kashmir.

Complementing the food is a selection of traditional beverages, including the popularly consumed and loved Kashmiri Kahwa, as well as coolers and lassis. 

The ambience at Café will also be styled to evoke the aesthetics of the valley, offering diners an immersive yet understated experience that aligns with the theme of the festival. Hence, the Kashmiri Food Festival is a limited-time offering for guests seeking an authentic regional-cuisine experience, presented with cultural integrity, refinement, and attention to detail.
