This November, Mizu Izakaya Goa transforms into a vibrant slice of Mexico as it welcomes Rayo from Mexico City for a Día de Muertos (Day of the Dead) takeover on November 5, in collaboration with Conosh.

Behind the bar will be mixologist Aldo Ramirez and Audrey Hands, Creative & Strategic Director at Rayo—ranked #87 on the World’s 50 Best Bars 2024. Together, they’ll bring the spirit of Mexico’s most iconic celebration to Goa through a specially curated cocktail menu that blends traditional flavours with contemporary craft.

“Welcoming Rayo for a Día de Muertos takeover is our way of celebrating global culture through the language we know best—food, craft, and community,” says Vedant Malik, Founder of Mizu Izakaya.

Expect soulful cocktails, Mexican-inspired dishes, and an atmosphere that celebrates life and memory through colour, flavour, and festivity.

An Odyssey Across China: A Grand Hyatt Collaboration of Three Masters

Grand Hyatt Mumbai, in collaboration with Grand Hyatt Kuala Lumpur and Lee Kum Kee, presents “A Journey Through China”—a three-day culinary showcase at China House from November 7 to 9, 2025.

The experience brings together Chef Danny Tan (Grand Hyatt Kuala Lumpur), and Chefs Zhang Ya Jun and Li Xiangbin (Grand Hyatt Mumbai) for an exploration of regional Chinese cuisines—from Sichuan spice and Cantonese finesse to Beijing-style barbecue.

Highlights include Steamed Chilean Seabass Dumplings, Macao-style Crispy Pork Belly, and Wok-fried Boston Lobster with Lemongrass-Chili Sauce, alongside vegetarian selections such as Crispy Cheung Fun Youtiao with Broccolini.

Each session—lunch or dinner—promises a deep dive into Chinese culinary artistry, balancing authenticity with innovation.

From the Raan-e-Jamavar—a 12-hour slow-cooked lamb leg—to the Dal-e-Jamavar, simmered overnight for a velvety finish, the menu showcases the depth and sophistication of regional Indian cooking. Sofitel Mumbai BKC’s signature restaurant Jyran – Tandoor Dining & Lounge presents Dawat-e-Rampur, a month-long culinary festival curated by Chef Waris Qureshi, running from November 1 to 30, 2025.

This experience pays tribute to Rampur’s Nawabi kitchens, where subtlety, balance, and refinement defined the cuisine. The menu features heirloom dishes such as Gosht Dashtar-e-Faizullah, Saundha Murgh Tikka, and Sambhal Gosht ke Sheekh, alongside rare finds like Arvi Talmakhane ka Qorma and Hari Mirch Mawe ka Halwa.

Inspired by the city’s golden culinary era, the menu reimagines comforting classics with refined precision — from Aam Chun Shui Mai (steamed quail egg and chicken dumpling) and Cha Hu Kok (chicken char siu taro puff) to Tung Po Yuk (braised pork belly with spring onion bao) and Suein Taim Sek Bun (sweet and sour grouper).

Vegetarian highlights like Lo Han Zai (stewed bean curd knots with broccoli) and Yang Cao Chow Fan (fried rice with vegetable char siu) bring simplicity and warmth, while desserts such as Phou King Tan Thak (Portuguese egg tart) and Chi Ma Chou (sesame praline ball) nod to Shanghai’s East-meets-West dessert culture.
