Blabber All Day
At Blabber All Day, one of Juhu’s go-to spots for all-things-experimental, the usual potato in sev puri gets swapped for avocado, in a gift your taste buds will thank you for: avocado sev puri. This spot in the backlanes of Juhu serves it with a lime wedge and green chilli, topped with chaat masala and tangy pomegranate, in the most Bombay-esque way possible.

We all love pretending like we’re eating something healthy when eating out, and this sev puri makes that lie a little easier to sell—creamy, light, and just green enough to feel guilt-free. Hurry, because no one can have just one!

Fine dining spots are usually our go-tos for unique, eccentric food fusions that we’ve probably never heard of before. At BKC’s Tresind, even their chaat gets that fine-dining treatment. The result? Their popular, finger-licking avocado ghewar.

It’s a rich mix of avocado, chickpeas, potatoes, and moong sprouts, which is layered with chutneys and their signature chaat masala, and then topped with ghewar crisped to perfection using liquid nitrogen (trust us, it changes everything). It’s the yummiest mix of indulgent and desi, served in a copper haandi—the cherry on top of the experience of this dish. It’s street food that isn’t quite from the streets, in the best way possible.

The Barn Cafe
The Barn is a place that has something for everyone, from your health-loving, calorie-counting gym-freak friend to your junk-gorging, food-obsessed neighbour. Enter: their special menu, termed ‘Ghar Ka Khana’, especially curated for those who want to eat out and at the same time, don’t. Sprawling with items like avocado sev puri (among other eye-catchers like wasabi pani puri), this spot in Santacruz is serving its own rendition of chaat, one weird ingredient at a time. The bonus? They’ve hopped onto the avocado bandwagon wholeheartedly, adding it to fries, even.
Their avocado sev puri is topped to perfection with raw mango, roasted channa, and coriander leaves—in aamchi Mumbai fashion.

Nksha
What’s the first thing that comes to your mind when you think of North-Indian cuisine? Butter chicken, paneer makhani, maa ki dal—right? Wrong!

Churchgate’s Nksha is redefining the limits of North-Indian cuisine, one unexpected fusion at a time. While avocado in sev puri could still just be guac and nachos at the end of the day, the chefs over at Nksha are doing their own rendition of aloo tikki chaat, made with avocado. Their karari laccha aloo tikki avocado chaat might be the most luxe version of a chaat that catches you off-guard in just how Punjabi it tastes (yes, even after the avocado), thanks to the laccha.
Pair it with tangy tamarind chutney and spicy green chutney, and it makes for the perfect fusion of flavours (at two ends of the spectrum, mind you) that you could have.
