Established by sibling duo Tallina and Tanaya Patnaik in June 2025, Odraa is Bhubaneswar’s first contemporary Odia cuisine establishment working to preserve and highlight the state’s culinary heritage.
The ingredient-forward restaurant is focused on sourcing ingredients from across the state and putting them together in preparations that present diners with authentic regional flavours and the cuisine at its most genuine self.
Named after “Odra,” the ancient name of Odisha, the restaurant honours traditional recipes while presenting them with modern flair. More than being a restaurant, it is a cultural preservation project celebrating Odisha’s lesser-known culinary richness.
Food At Odraa
One of the founders, Tallina Patnaik, a lawyer by profession who followed her inner calling for gastronomy, has crafted Odraa’s creative menu, an ode to the state’s cuisine.
Some signature dishes that you must look out for include the popular kandhamal roast (roasted sweet potato with greens and tomato relish), chitou pitha with mutton curry, poi potpourri, and unique desserts like khiri sarsatia.
A standout feature of their dishes is the ingredients sourced from across the state. These include sarsatia from Sambalpur (a regional snack made from tree resin, now crafted only by two families), badi (lentil dumplings, koli (a local berry) and muga (lentil) from Keonjhar district, puffed rice from Baripada, jaggery from Nayagarh and kora khai from the old town area.

What continues to set Odraa apart is its innovative approach to traditional cuisine.
In Odraa’s kitchen, there is great emphasis on traditional cooking techniques too. The slow-cooked mutton prepared using traditional cooking methods, beverages inspired by local ingredients, and home recipes have all contributed to the restaurant’s rising reputation. It places the food people across Odisha prepare in their kitchens in a fine dining restaurant.
The 50-seater restaurant (indoor seating of 38 guests and al-fresco seating for 12 diners) continues to evolve its menu seasonally and incorporates festive dishes that you must look for.
