OMO

In its first major menu refresh in two years, OMO has reimagined its ingredient-led philosophy by looking closely at India’s farms, seasonal harvests and regional food traditions. Led by Chef Chetna Chopra, the new menu is built around four pillars, seasonality, fermentation, place and interpretation. It moves beyond European techniques to draw equally from indigenous recipes, preservation practices and forgotten ingredients. Instead of designing dishes first, the kitchen works around what its network of farmers and cooperatives grows, making the menu a reflection of India’s diverse terroirs and everyday food traditions.

The menu brings this approach to life through dishes such as Bandel and Potato Wontons, which connect West Bengal’s Portuguese and Chinese culinary histories, and Jackfruit Croquette with Phalsa Compote and Coconut Salan, celebrating the fruit on its own terms. Saffron Risotto with Moringa Marrow reinterprets the Italian classic using indigenous Karpurkanti rice from the Sundarbans, while Curd Risotto with Kurkuri Bhindi gives South Indian curd rice an Italian-inspired texture. Other highlights include Gnocchi with Raw Mango Beurre Blanc, Maitake Sando crusted in poha, Kachori with Mole, Mango Caldin Curry and Pazham Pori with coconut milk gelato. Fermentation also runs through the beverage programme with drinks such as Jamun Wine and Bael Kanji, extending the restaurant’s focus on seasonality and preservation beyond the plate.

The Spice Route

The Spice Route has introduced a new seasonal menu that builds on its long-standing focus on Asian flavours with a selection of refined additions. Crafted around seasonal ingredients and classic techniques, the new dishes explore a range of tastes, textures and aromas while staying rooted in the restaurant’s culinary identity.

The new menu features dishes such as Sesame Chicken Salad with roasted chicken, snow peas, honey melon and sesame dressing; Golden Tofu with lotus root, wild mushrooms, kaffir lime and toasted sticky rice powder; and Jade Noodles with spinach ribbons, Thai pesto and coconut flakes. Other highlights include Steamed Jiaozi Dumplings filled with jackfruit and garden vegetables, Onyx Prawn Noodles with charcoal-grilled prawns and Thai basil, and the Imperial Spiced Tiramisu, which reimagines the classic dessert with masala chai-soaked shahi tukda, saffron and cardamom-infused mascarpone.

Red

At Red, the cocktail menu is built around a single idea, one red ingredient at the centre of every drink. Rather than using colour as a visual theme, the bar lets each ingredient define the flavour, character and identity of the cocktail. From tomato and pomegranate to amaranth leaf, watermelon, plum and chilli, every drink is shaped around one ingredient that takes the lead, creating a menu that moves across citrusy, savoury, earthy and umami profiles.

The line-up includes Rouge Orchard, which pairs Johnnie Walker Blonde with apple, celery, mint and bubbles; Amaranth Blush, combining Lucifer’s Gold with amaranth leaf, vanilla, hazelnut and almond; and the Salmon-tini, blending Bombay Sapphire, pink salmon, elderflower and a tobiko olive for a savoury finish. Wine Soaked Pom brings together Bombay Sapphire, wine, pomegranate reduction, mandarin and ponzu for a cocktail that leans towards the character of a glass of wine. Together, the drinks reflect the bar’s philosophy of letting a single ingredient shape every sip.

The Fio Table

The Fio Table’s new cocktail menu, The Millennial’s Cocktail Diary, draws on the memories, flavours and everyday rituals that shaped a generation. Rooted in the restaurant’s philosophy of shared tables and conversations, the menu revisits childhood snacks, games and familiar objects through contemporary mixology. Designed like a hand-drawn journal, each cocktail combines house-made infusions, seasonal ingredients and flavours from the Mediterranean pantry to turn nostalgia into a characteristic drinking experience.

The menu features cocktails such as Peppy Pepper Soda with tequila, whisky, bell pepper and sundried tomato, finished with a Peppy chip; Breakfast Manhattan made with peanut butter-washed whisky and served alongside Nutties; and TFT Cola layered with black cardamom, spices and a cola gummy. Other drinks include Tipsy Tippy Tap, served with an origami game, Melon-nial Star topped with a star-shaped melon garnish, Green Flag with snow pea jelly, and Our Own Garden (Estate), finished with a rim of Magic Pops and Polo mint. Also on the menu are P.S. Olive You, The French One, Pink Sicilian, Mi Amore-cano and Hazel After Dark, each balancing Mediterranean flavours with playful references to childhood memories.

Qavalli

Qavalli’s limited-edition monsoon cocktail menu draws inspiration from the slower pace and lingering evenings that arrive with the rains. Built as a progression rather than a conventional cocktail list, the menu celebrates seasonal fruit through six cocktails, each centred on a single ingredient. As the drinks move from vibrant and abundant to quieter and more restrained, the menu mirrors the unhurried rhythm of a mehfil, letting each fruit tell its own story.

The journey begins with Ruby Elixir, a sangria layered with five seasonal fruits and available in both red and white wine. It is followed by Sahar Al Moz, which pairs banana with cardamom, and Zumurrud, where ripe mango is balanced with rose water and mint. The Royal Melon Highball combines muskmelon and honey for a light, crisp finish, while Crown Off Dessert brings together saffron and cherry tomato in an unexpected closing cocktail. Across the menu, every drink is designed to let its featured fruit remain at the forefront.
