The recipe begins with lightly marinating rohu pieces in turmeric and salt before frying them in mustard oil until golden. Potato wedges are fried in the same way, allowing them to develop a crisp exterior while remaining firm enough to soak up the curry later. The flavour base comes together with pancha phutana, dried red chillies, and bay leaves, tempered in mustard oil, followed by onions, ginger-garlic paste, and tomato. Coriander, cumin and chilli powders are then added to build depth, before the fried potatoes are simmered in water until tender.
The fish goes in towards the end, allowing the pieces to gently absorb the spiced gravy without losing their texture.
